  • 4 Carrot
  • 1 Onion
  • 2 cloves Garlic
  • 2 tsp Ground cumin
  • 1000 ml Vegetable stock
  • 2 tbsp Extra-virgin olive oil
  • 1 tsp Salt
  • 1 Lemon (optional)

Method

  1. Chop the onion and carrot; mince the garlic.
  2. Soften the onion in the oil over medium heat, then add the garlic and cumin for 1 minute.
  3. Add the carrot, lentils, stock, and salt and bring to a boil.
  4. Simmer until the lentils and carrots are completely soft, about 18 minutes.
  5. Blend the soup smooth and stir in a squeeze of lemon.
  6. Ladle into bowls and serve hot.
