About Carrot & Red Lentil Soup
Carrot and red lentil soup is a Middle Eastern-leaning bowl that turns a few pantry staples into something velvety and satisfying. Red lentils are the workhorse here: they cook fast and, crucially, break down completely as they simmer, thickening the soup into a smooth puree without needing cream. Warmed with cumin and built on softened onion and garlic, it leans earthy and gently spiced, with sweet carrot balancing the savory lentils and a final squeeze of lemon to lift the whole pot.
The texture is thick and comforting rather than brothy, and because it's blended smooth it eats almost like a light dal in soup form. It's hearty but genuinely light — vegan, fiber-rich, and filling in the way lentils always are, which makes it a natural for a weeknight lunch or a simple supper with flatbread. The real selling point is speed and economy: everything simmers in one pot in about half an hour, and none of it requires anything you wouldn't already keep on the shelf. A drizzle of olive oil and extra lemon at the table sharpen it up.
