Ingredients

  • 400 g Chickpeas
  • 300 g Spinach
  • 1 Onion
  • 2 Tomato
  • 15 g Ginger
  • 3 cloves Garlic
  • 1 tsp Cumin seeds
  • 1 tsp Garam masala
  • ½ tsp Ground turmeric
  • 2 tbsp Extra-virgin olive oil
  • ½ tsp Salt

Method

  1. Chop the onion and tomato; grate the ginger and garlic; roughly chop the spinach.
  2. Fry the cumin seeds and onion in the oil until golden, then add the ginger-garlic, turmeric, and garam masala.
  3. Add the tomato and salt and cook to a paste, then stir in the chickpeas with a splash of water.
  4. Fold in the spinach and simmer until wilted and the flavors meld, 6 minutes.
  5. Serve hot.
