- 400 g Chickpeas
- 300 g Spinach
- 1 Onion
- 2 Tomato
- 15 g Ginger
- 3 cloves Garlic
- 1 tsp Cumin seeds
- 1 tsp Garam masala
- ½ tsp Ground turmeric
- 2 tbsp Extra-virgin olive oil
- ½ tsp Salt
Method
- Chop the onion and tomato; grate the ginger and garlic; roughly chop the spinach.
- Fry the cumin seeds and onion in the oil until golden, then add the ginger-garlic, turmeric, and garam masala.
- Add the tomato and salt and cook to a paste, then stir in the chickpeas with a splash of water.
- Fold in the spinach and simmer until wilted and the flavors meld, 6 minutes.
- Serve hot.
