  • 240 g Cooked chickpeas
  • 2 tbsp Extra-virgin olive oil
  • 1 tsp Salt
  • 60 g Arugula (optional)

Method

  1. Rinse the quinoa, then simmer it in plenty of salted water until tender and the grains uncurl, about 15 minutes; drain.
  2. Rub the chicken with the cumin, a pinch of salt, and half the oil.
  3. Sear the chicken in a hot skillet until cooked through and no longer pink in the centre, about 6 minutes a side, then rest and slice.
  4. Whisk the tahini with the lemon juice and a splash of water into a pourable dressing.
  5. Divide the quinoa, chickpeas, and arugula between bowls and lay the sliced chicken on top.
  6. Spoon the tahini dressing over and serve.
