Chicken & Shrimp Tortillas
Griddled cheesy tortillas piled with smoky chicken, seared shrimp, greens and a fresh blended salsa — quick with shop-bought tortillas.

Ingredients
- 6 Flour tortillas
- 300 g Chicken breast
- 200 g Shrimp
- 120 g Cheddar cheese
- 2 tbsp Olive oil
- 4 cloves Garlic
- 1 Lime
- 1 tsp Smoked paprika
- 1 tsp Ground cumin
- 2 Tomato
- 1½ tsp Salt
- ½ tsp Chili powder (optional)
- 100 g Romaine lettuce (optional)
- ¼ Onion (optional)
- 1 Chili (optional)
- 1 Green chili (optional)
- ½ tsp Black pepper (optional)
Method
- Slice the chicken breast into strips and toss with the smoked paprika, cumin, chili powder, the minced garlic, the lime juice, the salt and the black pepper. Set aside to season while you prep the rest.
- Blend the tomatoes, onion, the garlic, the red and green chilies and the salt until smooth or slightly chunky. Set the salsa aside to rest.
- Pat the shrimp dry and season lightly. Shred the lettuce and grate the cheese.
- Heat the olive oil in a pan over medium-high and cook the seasoned chicken for 5-6 minutes until golden and cooked through. Lift onto a board.
- In the same pan, sear the shrimp for about a minute per side until just pink. Set aside with the chicken.
- Slice the cooked chicken into strips and squeeze the remaining lime over the chicken and shrimp.
- Wipe the pan and set it over medium. Lay a tortilla in, scatter with cheese and warm until the cheese melts and the base is crisp and golden, about 2 minutes.
- Top each cheesy tortilla with lettuce, the chicken and shrimp, and a spoonful of the blended salsa. Repeat with the rest and serve.
