  • 300 g Flour
  • 35 g Neutral oil
  • 300 g Chicken breast
  • 200 g Shrimp
  • 120 g Cheddar cheese
  • 2 tbsp Olive oil
  • 4 cloves Garlic
  • 1 Lime
  • 1 tsp Smoked paprika
  • 1 tsp Ground cumin
  • 2 Tomato
  • 2 tsp Salt
  • ½ tsp Chili powder (optional)
  • 100 g Romaine lettuce (optional)
  • ¼ Onion (optional)
  • 1 Chili (optional)
  • 1 Green chili (optional)
  • ½ tsp Black pepper (optional)

Method

  1. Stir the flour with the salt, then rub in the neutral oil. Add warm water a little at a time until a shaggy dough forms.
  2. Knead for 5 minutes until smooth, then cover and rest the dough for 30 minutes.
  3. Slice the chicken breast into strips and toss with the smoked paprika, cumin, chili powder, the minced garlic, the lime juice, the salt and the black pepper.
  4. Blend the tomatoes, onion, the garlic, the red and green chilies and the salt until smooth or slightly chunky. Set the salsa aside to rest.
  5. Pat the shrimp dry and season lightly. Shred the lettuce and grate the cheese.
  6. Heat the olive oil in a pan over medium-high and cook the seasoned chicken for 5-6 minutes until golden and cooked through. Lift onto a board.
  7. In the same pan, sear the shrimp for about a minute per side until just pink. Set aside with the chicken.
  8. Slice the cooked chicken into strips and squeeze the remaining lime over the chicken and shrimp.
  9. Divide the rested dough into 6 balls and roll each out thinly, flouring lightly so they don't stick.
  10. Griddle each tortilla in a dry pan for 30-45 seconds a side until puffed and spotted golden.
  11. Lay a griddled tortilla back in the pan over medium, scatter with cheese and warm until it melts and the base is crisp, about 2 minutes.
  12. Top each cheesy tortilla with lettuce, the chicken and shrimp, and a spoonful of the blended salsa. Repeat with the rest and serve.
