About Spiced Chickpea Stew
This spiced chickpea stew is a Mediterranean take on the humble one-pan legume braise, and the difference from its Indian-spiced cousins comes down to two ingredients: cumin and smoked paprika. Those bloom in olive oil with softened onion and garlic to build a base that's earthy and gently smoky rather than fiery, before canned tomatoes and chickpeas simmer together into something thick and stew-like in about fourteen minutes. Spinach stirred in off the heat wilts from the residual warmth, keeping it bright green.
Eating it, you get the round sweetness of long-cooked tomato and onion, the smoky depth of paprika, and the creamy heft of chickpeas that turn a simple pot into a genuine meal. It's naturally vegan, high in fiber, and satisfying enough to stand on its own or serve with bread or rice to catch the sauce. The whole thing lands in about thirty minutes and leans entirely on pantry staples, which makes it a reliable fallback dinner. Blooming the spices before the liquid goes in is the small step that gives this stew its warmth and keeps it from tasting like plain simmered beans.
