Cumin and Allspice Chicken Tacos with Rice

- 3 Corn tortillas
- 250 g Chicken breast
- 70 g Basmati rice
- 1 tbsp Olive oil
- 1 tsp Ground cumin
- ½ tsp Allspice
- ½ Lemon
- 40 g Carrot (optional)
- 60 g Zucchini (optional)
- 10 g Parsley (optional)
Method
- Start the rice: rinse the basmati, tip it into a small pan with one and a half times its volume of water, bring it to a bare simmer and clamp the lid on for twelve minutes, then leave it standing off the heat.
- While the rice steams, cut the chicken breast into rough two-centimetre dice and turn it through the cumin and the allspice.
- Dice the carrot and courgette to about the size of the chicken pieces and chop the parsley.
- Heat the olive oil in a wide pan and cook the chicken hard for five minutes, moving it only twice, so the rub toasts against the pan and the pieces take colour.
- Tip in the carrot and courgette and keep everything moving for six minutes more, until the vegetables have softened and the chicken is cooked through. Squeeze the lemon half over at the very end.
- While the pan finishes, warm the corn tortillas one at a time on a dry griddle, half a minute each side, and keep them folded inside a tea towel.
- Set the rice, the pan and the parsley beside the warm tortillas and fill each one as you go — rice first, so it catches the pan juices.
