  • 22 g Brown rice
  • 160 g Chicken breast
  • 2 tsp Sumac
  • ½ Lemon
  • 1 tsp Olive oil
  • 100 g Cucumber (optional)
  • 100 g Tomato (optional)
  • 100 g Spinach (optional)
  • 10 g Parsley (optional)
  • 8 g Mint (optional)

Method

  1. Rinse the brown rice, then simmer it in twice its volume of salted water, covered, until tender and the water is absorbed, about 26 minutes.
  2. While the rice cooks: cut the chicken into thick strips and rub them with half the sumac and salt.
  3. While the rice cooks: dice the cucumber and tomato, chop the parsley and mint, and toss them with the remaining sumac and the juice of the lemon. Leave the salad to sit and draw its juices.
  4. Heat the olive oil in a pan over medium-high and cook the chicken for 6 minutes, turning once, until browned outside and just firm through.
  5. Add the spinach to the hot pan and turn it through the chicken juices for a minute until it just collapses.
  6. Spoon the brown rice into a shallow bowl, lay the chicken and wilted spinach over it, and tip the sumac salad on top with all the juice it has given out — that juice is the dressing.
