Ginger Prawn Donburi with Spinach and Edamame
Prawns seared hard with grated ginger, then folded through spinach and edamame and spooned over nutty brown rice with all the pan juices.

Ingredients
- 35 g Brown rice
- 150 g Shrimp
- 150 g Spinach
- 10 g Ginger
- 2 tsp Soy sauce
- 1 tsp Toasted sesame oil
- 80 g Edamame (optional)
- 1 tsp Rice vinegar (optional)
- 1 tsp Sesame seeds (optional)
- 2 g Nori sheets (optional)
Method
- Rinse the brown rice until the water runs clear, then simmer it in twice its volume of water, covered, until tender and the water is absorbed, about 25 minutes.
- While the rice cooks: peel and devein the prawns, pat them thoroughly dry, and grate the ginger.
- While the rice cooks: wash the spinach and shake it dry.
- Heat the sesame oil in a wide pan over high heat. Sear the prawns with the grated ginger for 2 minutes, until they curl and turn opaque at the edges.
- Add the spinach and edamame and toss for 1 minute, just until the spinach collapses and turns glossy.
- Off the heat, splash in the soy sauce and rice vinegar and swirl the pan once to coat.
- Fluff the brown rice into a bowl, spoon the prawns and greens over the top with all their pan juices, and finish with sesame seeds and torn nori.
