Ingredients

  • 45 g Edamame noodles
  • 200 g Shrimp
  • 150 g Bean sprouts
  • ½ Lime
  • 1 tsp Toasted sesame oil
  • 10 g Ginger (optional)
  • ½ tsp Fish sauce (optional)
  • 10 g Cilantro (optional)
  • 1 Thai chilies (optional)

Method

  1. Blot the prawns dry, grate the ginger, ring the chilli and pick the coriander leaves off their stalks.
  2. Boil the edamame noodles four minutes in unsalted water, then drain and rinse them cold. They are bean flour, not wheat, and go to paste if you leave them longer.
  3. Sear the prawns in the sesame oil over the highest flame, ninety seconds a side, until they curl and firm up. Add the ginger and chilli for the last ten seconds.
  4. Off the heat, fold in the drained noodles, the fish sauce and the juice of the half lime, then the bean sprouts last of all so they keep their snap. Scatter the coriander.
