Edamame Noodles with Prawns and Pak Choi
Prawns seared hard in a dry wok, then tossed off the heat through edamame noodles and pak choi with ginger and rice vinegar.

Ingredients
- 60 g Edamame noodles
- 180 g Shrimp
- 150 g Bok choy
- 12 g Ginger
- 1 tsp Toasted sesame oil
- 2 tsp Light soy sauce (optional)
- 2 tsp Rice vinegar (optional)
- 15 g Scallions (optional)
- 5 g Sesame seeds (optional)
Method
- Blot the prawns dry. Split the pak choi lengthways so the stems cook at the same rate as the leaves, grate the ginger and slice the spring onions thin.
- Boil the edamame noodles for four minutes in unsalted water — they are pure bean flour and will slump into mush if pushed past that. Drain and rinse them cold to stop the cooking.
- Get a wok smoking with the sesame oil and lay the prawns in one uncrowded layer. Ninety seconds a side, until they curl into loose Cs and lose the last of their grey.
- Push the prawns to the rim, drop the ginger into the bare middle for ten seconds, then add the pak choi and a splash of water and cover for two minutes, until the stems turn translucent at the edge.
- Kill the heat, fold the drained noodles through with the soy and rice vinegar, and turn everything over twice — off the flame, because these noodles break up if they are stir-fried. Scatter the spring onion and sesame seeds.
