- 35 g Edamame noodles
- 190 g Shrimp
- 120 g Cucumber
- 6 g Shiso (perilla) leaves
- 2 tsp Rice vinegar
- 1 tsp Toasted sesame oil
- 1 tsp Light soy sauce (optional)
Method
- Smack the cucumber with the flat of a knife until it splits, tear it into rough chunks and salt it lightly in a colander to draw out water. Shred the shiso.
- Boil the edamame noodles four minutes, then drain and rinse them under cold water until they stop feeling slippery.
- Sear the prawns in the sesame oil over the highest flame, ninety seconds a side, until they curl into loose Cs, then tip them onto a plate to stop cooking.
- Squeeze the cucumber dry, turn it through the noodles with the rice vinegar and soy, lay the prawns over and scatter the shiso.
