  • 70 g Edamame noodles
  • 2 Egg
  • 1 tbsp Gochujang
  • 1 tbsp Rice vinegar
  • 2 tsp Toasted sesame oil
  • 120 g Cucumber (optional)
  • 80 g Carrot (optional)
  • 1 tsp Light soy sauce (optional)
  • 5 g Sesame seeds (optional)

Method

  1. Lower the eggs into boiling water and give them seven minutes for a set white and a jammy middle, then cool them under a running tap and peel them.
  2. Cut the cucumber into short batons and the carrot into fine matchsticks. Whisk the gochujang with the rice vinegar, sesame oil and soy until it pours off the whisk in a thread.
  3. Boil the edamame noodles four minutes, then drain and rinse them under cold water, working them with your fingers until they stop feeling slippery.
  4. Turn the cold noodles through the dressing until every strand is stained red, pile the cucumber and carrot over, halve the eggs onto the top and scatter the sesame seeds.
