- 40 g Edamame noodles
- 180 g Tuna
- 120 g Cucumber
- 8 g Shiso (perilla) leaves
- ½ tsp Sichuan peppercorn
- 2 tsp Chinkiang black vinegar
- 1 tsp Toasted sesame oil
- 2 tsp Light soy sauce (optional)
- 5 g Sesame seeds (optional)
Method
- Lay the cucumber on a board and smack it with the flat of a knife until it splits, then tear it into rough chunks — torn faces hold dressing where cut ones shed it.
- Toast the sichuan peppercorns in a dry pan for thirty seconds, until they smell of citrus rather than dust, then crush them coarsely in a mortar.
- Boil the edamame noodles four minutes, then drain and rinse them under cold water until they stop feeling slippery.
- Whisk the sesame oil into the soy and black vinegar with the crushed pepper, and shred the shiso into fine ribbons.
- Turn the cold noodles through the dressing, fold in the cucumber and flake the drained tuna over in large pieces rather than stirring it to shreds. Finish with the shiso and sesame seeds.
