Ingredients

  • 150 g Edamame
  • 12 g Dried shiitake
  • 10 Dumpling wrappers
  • 8 g Ginger
  • 2 tsp Toasted sesame oil
  • 2 tsp Neutral oil
  • 80 g Green cabbage (optional)
  • 50 g Carrot (optional)
  • 2 tsp Light soy sauce (optional)
  • 15 g Scallions (optional)

Method

  1. Cover the dried shiitake with just-boiled water and leave them twenty minutes, until the caps are pliable all the way to the stem. Keep the soaking liquid.
  2. Shred the cabbage very fine, salt it lightly and leave it in a colander to weep while everything else comes together.
  3. Crush the edamame roughly with a fork so about half stay whole — blitzed smooth the filling turns pasty. Grate the carrot and the ginger into it.
  4. Squeeze the cabbage dry in your fist, chop the soaked mushrooms small and fold both into the edamame with the sesame oil, the soy and a spoon of the mushroom soaking liquid.
  5. Damp the rim of each wrapper, sit a spoon of filling in the middle and pleat one side only, pressing it against the flat side so the gyoza sits upright.
  6. Stand them flat-bottomed in the neutral oil over medium heat for three minutes until the bases are golden, then pour in enough water to come a finger's width up the pan and cover at once. Seven minutes, until the water has gone and the wrappers are translucent.
  7. Turn them out crisp side up and scatter the sliced spring onion over the top.
