  • 40 g Edamame noodles
  • 200 g White fish fillet
  • 200 g Bok choy
  • 1 tsp Toasted sesame oil
  • 12 g Ginger (optional)
  • 2 tsp Japanese soy sauce (koikuchi shoyu) (optional)
  • ½ Lemon (optional)
  • 15 g Scallions (optional)

Method

  1. Split the pak choi lengthways, cut the ginger into fine threads and slice the spring onions on a long angle.
  2. Lay the pak choi cut-side down in the sesame oil with a splash of water, sit the fish on top and scatter over the ginger. Cover and leave it seven minutes, until the fish flakes at a gentle push.
  3. While the fish steams, boil the edamame noodles four minutes and drain them.
  4. Fold the noodles into the pan with the pak choi and every drop of the steaming juices, break the fish over in large flakes, then finish with the soy, a squeeze of lemon and the spring onion.
