- 40 g Edamame noodles
- 230 g Firm tofu
- 120 g Spinach
- 2 g Curry leaves
- 1 tsp Brown mustard seeds
- ½ tsp Ground turmeric
- 2 tsp Tamarind paste
- ½ tsp Toasted sesame oil
- 1 Green chili (optional)
- 1 tsp Light soy sauce (optional)
Method
- Wrap the tofu in a cloth and sit something heavy on it for ten minutes, then cut it into thick fingers. Slit the green chilli lengthways and loosen the tamarind in two spoonfuls of warm water.
- Fry the tofu in a dry nonstick pan over medium-high for six minutes, turning only when each face has gone golden and lets go of the pan by itself.
- Push the tofu aside, add the sesame oil and the mustard seeds and wait for them to crackle and jump — that popping is the whole point of the tempering. Throw in the curry leaves and chilli for five seconds, then the turmeric off the heat so it does not scorch.
- Add the spinach and the tamarind water and turn until the leaves collapse, about a minute, then season with the soy.
- Boil the edamame noodles four minutes and drain them.
- Fold the noodles through the spinach and its tamarind liquor, keeping the tofu on top so it stays crisp.
