- 120 g Edamame noodles
- 250 g Firm tofu
- 2 Egg
- 120 g Spinach
- 10 g Ginger
- 1 tbsp Toasted sesame oil
- 2 tsp Light soy sauce (optional)
Method
- Press the tofu under a weight for ten minutes, then cut it into thick fingers. Grate the ginger and beat the eggs.
- Fry the tofu in two thirds of the sesame oil over medium-high for six minutes, turning only when each face has gone golden and lets go of the pan by itself. Lift it out.
- Add the rest of the oil with the ginger and the spinach and turn until the leaves collapse, then drop the heat right down and pour in the eggs, dragging them across until they set in soft curds.
- Boil the edamame noodles four minutes in unsalted water and drain them.
- Fold the noodles through the egg and spinach with the soy, then lay the tofu back on top so it keeps its crust.
