Ingredients

  • 45 g Edamame noodles
  • 180 g Chicken breast
  • 150 g Bean sprouts
  • 1 tbsp Chinkiang black vinegar
  • 1 tsp Toasted sesame oil
  • 2 tsp Chinese sesame paste (optional)
  • 2 tsp Light soy sauce (optional)
  • 10 g Ginger (optional)
  • 15 g Scallions (optional)

Method

  1. Sit the chicken breast in a small pan with the sliced ginger, cover it with cold water and bring it up until the surface only shivers. Fourteen minutes at that tremble, never a boil.
  2. Lift the breast out and let it stop steaming, then pull it apart along the grain into coarse threads.
  3. Loosen the sesame paste with the black vinegar, soy and sesame oil, adding cold water a spoonful at a time until it runs off the spoon in a ribbon. Slice the spring onions thin.
  4. Boil the edamame noodles four minutes, adding the bean sprouts for the last twenty seconds, then drain both together and rinse them cold.
  5. Turn the cold noodles and sprouts through the dressing, pile the shredded chicken on top and scatter the spring onion over.
