Ingredients

  • 240 g Shrimp
  • 70 g Quinoa
  • 110 g Edamame
  • ½ Lime
  • 2 tsp Extra-virgin olive oil
  • 50 g Avocado (optional)
  • 80 g Cherry tomatoes (optional)
  • ½ tsp Ground cumin (optional)
  • 10 g Cilantro (optional)

Method

  1. Rinse the quinoa in a sieve until the water runs clear, then simmer it in twice its volume of salted water for fifteen minutes, until the grains uncurl and the pan goes dry. Fork it up and let it cool a little.
  2. Pat the prawns dry and toss them with the cumin and a pinch of salt.
  3. Halve the tomatoes, dice the avocado, chop the coriander and squeeze the lime over the lot so the avocado holds its colour.
  4. Drop the edamame into boiling water for three minutes, until they squeak but give, then refresh them cold so they stay bright.
  5. Heat the olive oil in a wide pan until it shimmers and sear the prawns in one layer, ninety seconds a side, until they curl into loose Cs and no more.
  6. Fold the quinoa, edamame and dressed vegetables together, lay the hot prawns over the top and pour the pan's oil across them.
