About White Bean and Tuna Salad

This white bean and tuna salad is a Spanish take on the Mediterranean pantry staple that turns tinned fish and beans into a substantial, satisfying plate. Creamy cannellini beans form the base, their soft, mild starchiness balanced by flakes of oil-packed tinned tuna, sharp raw onion, and fresh parsley. The dressing is unfussy but distinctly Spanish: sherry vinegar, whose nutty, slightly oxidized tang is more complex than ordinary vinegar, and good olive oil. Quartered hard-boiled eggs add richness and make it a full meal.

The beauty of the dish is that it comes together in about twelve minutes with no real cooking beyond boiling the eggs, most of which is unattended while you drain the beans and slice the onion. Nothing needs to be hot, so it is ideal for warm weather and can sit happily at room temperature. High in protein and fiber, it eats as a light lunch, a picnic dish, or part of a tapas spread. It rewards good ingredients: quality tinned tuna and a decent sherry vinegar make an outsized difference in something this simple.
