- 300 g Puy lentils
- 1 Onion
- 3 cloves Garlic
- 1 tbsp Red wine vinegar
- 4 tbsp Olive oil
- ½ tsp Salt
- 1 Carrot (optional)
- 200 g Canned tomatoes (optional)
- 1 Bay leaves (optional)
Method
- Dice the onion and carrot and mince the garlic.
- Sweat the vegetables in the olive oil, 5 minutes.
- Add the lentils, tomato, bay, salt, and water and simmer until the lentils are soft, 35 minutes.
- Stir in the vinegar off the heat and serve with more olive oil.
