- 200 g Farro
- 250 g Chickpeas
- 200 g Cherry tomatoes
- 1 Cucumber
- ½ Red onion
- 1 Lemon
- 3 tbsp Extra-virgin olive oil
- 4 tbsp Parsley
- ½ tsp Salt
- 50 g Kalamata olives (optional)
Method
- Simmer the farro in plenty of water until tender with a little bite, about 25 minutes, then drain and cool.
- Halve the tomatoes, dice the cucumber, thinly slice the onion, and chop the parsley.
- Whisk the lemon juice, oil, and salt into a dressing.
- Toss the cooled farro with the chickpeas, vegetables, olives, and dressing.
