  • 600 g Green beans
  • 1 Onion
  • 2 cloves Garlic
  • 3 Tomato
  • 5 tbsp Olive oil
  • ½ tsp Salt
  • 2 Potatoes (optional)
  • 15 g Parsley (optional)

Method

  1. Trim the beans and cut the potatoes into wedges; dice the onion and grate the tomatoes.
  2. Soften the onion and garlic in the olive oil, 4 minutes.
  3. Add the beans, potatoes, tomato, salt, and a little water and braise, covered, until meltingly soft, 30 minutes.
  4. Finish with parsley and a drizzle of olive oil.
