- 600 g Green beans
- 1 Onion
- 2 cloves Garlic
- 3 Tomato
- 5 tbsp Olive oil
- ½ tsp Salt
- 2 Potatoes (optional)
- 15 g Parsley (optional)
Method
- Trim the beans and cut the potatoes into wedges; dice the onion and grate the tomatoes.
- Soften the onion and garlic in the olive oil, 4 minutes.
- Add the beans, potatoes, tomato, salt, and a little water and braise, covered, until meltingly soft, 30 minutes.
- Finish with parsley and a drizzle of olive oil.
