About Fasolia
Fasolia is a home-style Middle Eastern bean braise, a dish whose name simply means "beans" and which appears in countless variations across the Levant and beyond. This version leans warm and aromatic: cannellini beans are simmered in a tomato sauce seasoned with cumin and a whole cinnamon stick, a combination that gives the dish its distinctive fragrance and gently sweet backbone. The defining move is blooming the cumin and cinnamon in oil before the tomatoes go in, which coaxes out their oils and keeps the spice from tasting raw or dusty. It is the kind of everyday cooking that turns a can of beans into something worth serving to guests.
The result is thick, soft, and deeply savory, the beans turning creamy as they soak up the spiced tomato while the cinnamon perfumes everything without overpowering it. This is comfort food you eat with a spoon or scoop up with flatbread, and it is traditionally served warm over rice or with bread to catch the sauce. Naturally vegan and high in fiber, fasolia makes a satisfying meatless main or a substantial side within a larger spread. Because it comes together in about half an hour from pantry staples, it is an easy answer to a weeknight when you want something warming and filling.
