About Fava Santorini

Fava Santorini is a Greek split-pea purée and a protected regional specialty, named for the volcanic island of Santorini where the yellow split peas grown in the ash-rich soil are prized for their exceptional smoothness. Despite the name, it contains no fava beans at all; "fava" in Greek refers to the puréed dish itself. The peas are simmered with onion and garlic until they collapse completely, then blended with olive oil and lemon into something silky and spreadable — a texture closer to hummus than to soup, and the whole reason the dish is worth making.

On the plate it is mellow, earthy, and gently sweet, with the raw red onion and a final drizzle of olive oil on top adding sharpness and richness against the soft base. It is a classic meze, served as an appetizer or part of a shared table, scooped up with bread or eaten alongside grilled vegetables, seafood, or a glass of the island's crisp white wine. Warm or at room temperature, it holds its own either way. This version keeps the method uncomplicated — simmer until soft, then blend generously with oil and lemon — so the natural creaminess of the peas does the heavy lifting.
