  • 4 tbsp Olive oil
  • 1 Lemon
  • ⅜ tsp Salt
  • 2 cloves Garlic (optional)

Method

  1. Rinse the split peas and simmer with half the onion, the garlic, and plenty of water, skimming, until collapsing, 40 minutes.
  2. Blend the peas with the salt and half the olive oil until smooth and warm.
  3. Spread on a plate, top with the remaining raw onion, a squeeze of lemon, and olive oil.
