  • 400 g Fava beans
  • 1 Onion
  • 3 cloves Garlic
  • 3 tbsp Olive oil
  • 0.4 tsp Salt
  • 3 Scallions (optional)
  • 100 ml White wine (optional)
  • 1 tsp Mint (optional)

Method

  1. If using dried favas, soak and pre-cook until nearly tender; fresh favas need only shelling.
  2. Soften the onion, garlic, and scallions in the olive oil, 5 minutes.
  3. Add the favas, wine, mint, salt, and a little water and braise until tender and glazed, 20 minutes.
  4. Serve warm.
