Ingredients

  • 1 Whole wheat tortillas
  • 180 g Black beans
  • 150 g Spinach
  • 1½ tsp Ground cumin
  • ½ Lime
  • 2 tsp Olive oil
  • 100 g Tomato (optional)
  • 60 g Avocado (optional)
  • 1 Jalapeno (optional)
  • 12 g Cilantro (optional)

Method

  1. Drain and rinse the black beans. Dice the tomato and jalapeno, slice the avocado, and chop the coriander.
  2. Warm the olive oil in a pan over medium with the cumin for 30 seconds, then add the beans and crush about half of them against the base with a fork so they bind the rest.
  3. Add the tomato and spinach and turn through until the spinach collapses and the mixture is thick enough to hold its shape on a spoon, about 3 minutes. Squeeze in the lime off the heat.
  4. While the beans cook, warm the tortilla in a dry pan for a minute a side until soft and flexible.
  5. Spoon the beans down the middle of the warm tortilla, add the avocado and coriander, fold the ends in and roll it tight.
  6. Cut in half and eat while the filling is still hot.
