- 300 g Kabocha squash
- 150 g Long beans
- 100 g Spinach
- 4 Shallot
- 1 tsp Black pepper
- 15 g Thai basil
- 150 g Mushroom (optional)
- 1 tbsp Fish sauce (optional)
Method
- Pound the shallots and peppercorns into a rough paste.
- Cube the squash and cut the long beans; bring water to a boil and stir in the paste.
- Simmer the squash until nearly soft, 12 minutes, then add the beans and mushrooms for 5 more.
- Stir in the greens and basil, season with the fish sauce, and serve.
