- 300 g Cannellini beans
- 300 g Cabbage
- 2 Carrot
- 2 Potatoes
- 1 Leek
- 1 Onion
- 2 tbsp Olive oil
- ½ tsp Salt
- 3 cloves Garlic (optional)
- 1 tsp Thyme (optional)
Method
- Soak the white beans for an hour, then drain.
- Chop the leek, onion, carrot, potato, and cabbage.
- Sweat the aromatics in the olive oil, then add the beans, garlic, thyme, salt, and water and simmer 45 minutes.
- Add the potato and cabbage and simmer until everything is tender, 20 minutes.
- Ladle into deep bowls and serve.
