Ingredients

  • 100 g Brown rice
  • 250 g Shrimp
  • 1½ tsp Ground cumin
  • 1 tbsp Olive oil
  • ½ Lemon
  • 100 g Chickpeas (optional)
  • 100 g Tomato (optional)
  • 100 g Spinach (optional)
  • 10 g Parsley (optional)

Method

  1. Rinse the brown rice, then simmer it in twice its volume of salted water, covered, until tender and the water is absorbed, about 30 minutes.
  2. While the rice cooks: peel the prawns and toss them with the cumin and salt. Drain and rinse the chickpeas.
  3. While the rice cooks: chop the tomato, wash the spinach, and chop the parsley.
  4. Heat the olive oil in a wide pan over high and cook the cumin prawns for 2 minutes, turning once, until pink and just firm. Lift them out.
  5. Add the chickpeas and tomato to the same pan and cook 4 minutes, pressing some of the chickpeas against the base so they thicken the juices.
  6. Add the spinach and turn it through until it collapses, then return the prawns, take the pan off the heat and squeeze over the lemon.
  7. Fork the brown rice through the pan so it takes up the cumin oil and tomato, then turn it all into a wide bowl and scatter over the parsley.
