Lemon-Cumin Prawns with Rice and Courgette

- 22 g Brown rice
- 200 g Shrimp
- 150 g Zucchini
- 1½ tsp Ground cumin
- ½ Lemon
- 1 tsp Olive oil
- 100 g Spinach (optional)
- 80 g Tomato (optional)
- 10 g Parsley (optional)
- 8 g Mint (optional)
Method
- Rinse the brown rice, then simmer it in twice its volume of lightly salted water, covered, until tender and the water is absorbed, about 26 minutes.
- While the rice cooks: peel the prawns and toss them with the cumin. Cut the courgette into thick half-moons.
- While the rice cooks: chop the tomato, wash the spinach, chop the parsley and tear the mint.
- Warm the olive oil in a wide pan over medium-high and cook the courgette for 5 minutes, undisturbed at first, until it colours on the cut sides.
- Add the cumin prawns and the tomato and cook 2 minutes, until the prawns turn pink and the tomato slackens around them.
- Add the spinach and turn it through until it collapses, then take the pan off the heat and squeeze in the lemon.
- Spoon the brown rice into a shallow bowl and tip the prawns and vegetables over it with all the cumin-lemon juices. Scatter the parsley and mint.
