- 25 g Brown rice
- 180 g Shrimp
- 200 g Spinach
- 10 g Dill
- 1 Lemon
- 2 tsp Olive oil
- 100 g Green beans (optional)
- 100 g Tomato (optional)
Method
- Rinse the brown rice, then simmer it in twice its volume of salted water, covered, until tender and the water is absorbed, about 26 minutes.
- While the rice cooks: peel the prawns, top and tail the green beans, and chop the tomato roughly.
- While the rice cooks: wash the spinach, chop the dill, and zest and juice the lemon.
- Warm the olive oil in a wide pan over medium heat and cook the green beans with the tomato for 6 minutes, until the beans give and the tomato has collapsed into a loose sauce.
- Raise the heat, add the prawns and cook 2 minutes until they turn pink and curl, then tip in the spinach and turn it through until it collapses.
- Off the heat, squeeze in the lemon juice and scatter over the zest and all the dill — it must not cook or it loses its scent.
- Fork the brown rice through the prawns and greens in the pan so it takes up the tomato and lemon, then turn the lot into a shallow bowl.
