  • 1 Onion
  • 20 g Dill
  • 2 Lemon
  • 5 tbsp Olive oil
  • ½ tsp Salt
  • 3 Scallions (optional)

Method

  1. Soak the beans overnight, then simmer until nearly tender, 50 minutes, and drain.
  2. Sweat the onion and scallions in the olive oil, then wilt in the spinach.
  3. Add the beans, salt, and a little water and simmer to meld, 15 minutes.
  4. Finish with plenty of dill and lemon.
