- 250 g Spinach
- 1 Onion
- 20 g Dill
- 2 Lemon
- 5 tbsp Olive oil
- ½ tsp Salt
- 3 Scallions (optional)
Method
- Soak the beans overnight, then simmer until nearly tender, 50 minutes, and drain.
- Sweat the onion and scallions in the olive oil, then wilt in the spinach.
- Add the beans, salt, and a little water and simmer to meld, 15 minutes.
- Finish with plenty of dill and lemon.
