  • 300 g Chicken breast
  • 240 g Cannellini beans
  • 2 Carrot
  • 1 Onion
  • 1200 ml Chicken stock
  • 1 tbsp Extra-virgin olive oil
  • 1 tsp Salt
  • 2 stalks Celery (optional)
  • 80 g Spinach (optional)
  • 1 Lemon (optional)

Method

  1. Dice the onion, carrot, and celery.
  2. Soften the vegetables in the oil over medium heat for 5 minutes.
  3. Add the chicken, stock, and salt and simmer until the chicken is cooked, about 15 minutes, then lift it out and shred it.
  4. Return the shredded chicken with the drained beans and spinach and warm through for 3 minutes.
  5. Squeeze the lemon in and serve hot.
