  • 400 g Lotus stem
  • 1 Carrot
  • 15 g Mint
  • 15 g Cilantro
  • 40 g Peanuts
  • 2 Lime
  • 1½ tbsp Fish sauce
  • 200 g Shrimp (optional)
  • 1 Thai chilies (optional)
  • 1 tsp Sugar (optional)

  1. Drain the lotus stems and julienne the carrot; poach the shrimp until pink and halve them.
  2. Whisk the lime, fish sauce, sugar, and chili into a dressing.
  3. Toss the lotus, carrot, shrimp, and herbs in the dressing and top with peanuts.
