- 400 g Lotus stem
- 1 Carrot
- 15 g Mint
- 15 g Cilantro
- 40 g Peanuts
- 2 Lime
- 1½ tbsp Fish sauce
- 200 g Shrimp (optional)
- 1 Thai chilies (optional)
- 1 tsp Sugar (optional)
Method
- Drain the lotus stems and julienne the carrot; poach the shrimp until pink and halve them.
- Whisk the lime, fish sauce, sugar, and chili into a dressing.
- Toss the lotus, carrot, shrimp, and herbs in the dressing and top with peanuts.
