Ingredients

  • 22 g Brown rice
  • 200 g Shrimp
  • 2 tsp Fish sauce
  • 1 Lime
  • 1 tsp Peanut oil
  • 120 g Bean sprouts (optional)
  • 80 g Green beans (optional)
  • 80 g Cucumber (optional)
  • 80 g Tomato (optional)
  • 2 Thai chilies (optional)
  • 12 g Cilantro (optional)
  • 10 g Mint (optional)

Method

  1. Rinse the brown rice, then simmer it in twice its volume of water, covered, until tender and the water is absorbed, about 26 minutes.
  2. While the rice cooks: peel the prawns and top and tail the green beans.
  3. While the rice cooks: slice the cucumber and tomato, chop the chillies, and pick the coriander and mint leaves. Whisk the fish sauce with the juice of the lime to make the dressing.
  4. Heat the peanut oil in a wide pan over high and cook the green beans for 3 minutes until blistered but still squeaky.
  5. Add the prawns and cook 2 minutes until pink and just firm, then take the pan off the heat and tip in the bean sprouts so they only half-wilt in the residual heat.
  6. Fork the brown rice into a wide bowl, tip the hot prawns and vegetables over it, add the raw cucumber and tomato and pour on the lime dressing while everything is still warm — it draws the flavour in. Fold through the herbs and chilli at the last second.
