Ingredients

  • 110 g Brown rice
  • 250 g Shrimp
  • 1 tbsp Fish sauce
  • 1 Lime
  • 1 tbsp Peanut oil
  • 120 g Green beans (optional)
  • 100 g Bean sprouts (optional)
  • 15 g Peanuts (optional)
  • 2 Thai chilies (optional)
  • 12 g Cilantro (optional)

Method

  1. Rinse the brown rice, then simmer it in twice its volume of water, covered, until tender and the water is absorbed, about 30 minutes.
  2. While the rice cooks: peel the prawns, top and tail the green beans, and slice the chillies.
  3. While the rice cooks: crush the peanuts roughly and chop the coriander.
  4. Get a wok very hot with the peanut oil and stir-fry the green beans and chilli for 3 minutes until blistered.
  5. Add the prawns and stir-fry 2 minutes until pink, then pour in the fish sauce and let it reduce against the hot pan for 30 seconds.
  6. Kill the heat, add the bean sprouts and fold them through once so they stay crisp, then squeeze in half the lime.
  7. Fluff the brown rice into a wide bowl and tip the prawns and vegetables over it with the pan juices. Scatter the crushed peanuts and coriander, with the rest of the lime in wedges.
