  • 3 cloves Garlic
  • 400 g Canned tomatoes
  • 3 tbsp Olive oil
  • ½ tsp Salt
  • 1 Carrot (optional)
  • 1 tsp Thyme (optional)
  • 10 g Parsley (optional)

Method

  1. Soak the beans for an hour, then simmer until nearly tender, 45 minutes, and drain.
  2. Soften the diced onion, garlic, and carrot in the olive oil, then add the tomatoes, thyme, and salt and simmer 12 minutes.
  3. Fold in the beans and simmer to marry, 8 minutes.
  4. Scatter with parsley and serve.
