Ingredients
- 350 g Cannellini beans
- 2 Onion
- 3 cloves Garlic
- 400 g Canned tomatoes
- 3 tbsp Olive oil
- ½ tsp Salt
- 1 Carrot (optional)
- 1 tsp Thyme (optional)
- 10 g Parsley (optional)
Method
- Soak the beans for an hour, then simmer until nearly tender, 45 minutes, and drain.
- Soften the diced onion, garlic, and carrot in the olive oil, then add the tomatoes, thyme, and salt and simmer 12 minutes.
- Fold in the beans and simmer to marry, 8 minutes.
- Scatter with parsley and serve.
