  • 100 g Oats
  • 20 g Ground flaxseed
  • 1 Apple (tart)
  • 150 g Yogurt
  • 150 ml Milk (optional)
  • 1 tbsp Honey (optional)

  2. Toast the walnuts in a dry pan until fragrant, about 3 minutes, then chop them roughly.
  3. Loosen the soaked bircher with a splash of milk if it has thickened too far, and dust with cinnamon.
  4. Spoon into bowls and scatter the toasted walnuts over.

About Apple & Flax Bircher Muesli

Apple and flax bircher muesli is a modern take on the original Swiss breakfast invented around the turn of the twentieth century by a physician who wanted his patients eating raw fruit and grains. The defining move is soaking rather than cooking: oats are stirred with yogurt, milk, and honey, then left in the fridge overnight so they soften into something spoonable without a stove ever being lit. Grated apple, skin and all, goes in for sweetness and texture, while ground flaxseed pushes the soluble-fiber content up. It is a make-ahead breakfast in the truest sense — five minutes of effort the night before buys you a ready bowl in the morning.

The result is cool, creamy, and gently tart, with the apple lending both moisture and a fresh edge against the mellow yogurt and honey. Toasting the walnuts before they go on top matters more than it sounds: it wakes up their oils and gives the soft bowl a necessary crunch. Because the oats and flax are packed with soluble fiber, it stays with you and keeps hunger at bay through a long morning, which is the whole point of the style. Loosen it with a splash of milk if it has set too thick overnight, dust with cinnamon, and eat it straight from the fridge on a warm day.
