Ingredients

  • 600 g Kabocha squash
  • 150 g Adzuki beans (red bean / anko)
  • ¼ tsp Salt (optional)
  • 1 tbsp Maple syrup (optional)

Method

  1. Simmer the adzuki beans in plenty of water until very soft, about 25 minutes, then drain.
  2. Peel and chunk the kabocha and steam until soft, 12 minutes, then mash smooth.
  3. Combine the mashed squash and beans with water to a porridge consistency, add salt, and warm through, 5 minutes.
  4. Sweeten with a little maple syrup if you like and serve warm.
