- 600 g Kabocha squash
- 150 g Adzuki beans (red bean / anko)
- ¼ tsp Salt (optional)
- 1 tbsp Maple syrup (optional)
Method
- Simmer the adzuki beans in plenty of water until very soft, about 25 minutes, then drain.
- Peel and chunk the kabocha and steam until soft, 12 minutes, then mash smooth.
- Combine the mashed squash and beans with water to a porridge consistency, add salt, and warm through, 5 minutes.
- Sweeten with a little maple syrup if you like and serve warm.
