Ingredients

  • 2 tin Chickpeas
  • 120 ml Tahini
  • 2 Lemon
  • 2 cloves Garlic
  • 3 tbsp Extra-virgin olive oil
  • 1 tsp Salt
  • ½ tsp Ground cumin (optional)

Method

  1. Tip the chickpeas into a pot, cover with water, and simmer until very soft, about 10 minutes.
  2. While the chickpeas simmer, prep the mise: halve and juice the lemons, peel and finely mince (or smash to a paste) the garlic, and measure out the tahini, cumin, and salt.
  3. Drain the chickpeas and rinse under cold water until cool enough to handle, then pinch each one to slip off its skin for the silkiest texture.
  4. Blend the warm chickpeas with the lemon juice, garlic, tahini, cumin, and salt until whipped and smooth, loosening with ice water 1 tablespoon at a time (about 3 to 4 tbsp) until silky and pale.
  5. Spread on a plate, pool with olive oil, and serve.
