  • 3 Tomato
  • 5 cloves Garlic
  • 8 tbsp Extra-virgin olive oil
  • 1 tsp Salt
  • 4 tbsp Parsley (optional)

Method

  1. Heat the oven to 180C (350F); fry the whole slit eggplants in the oil over medium heat until soft and collapsing, about 14 minutes, then set aside.
  2. Soften the sliced onion, garlic, and tomato in oil over medium heat into a sweet filling, about 12 minutes, then stir in the parsley and salt.
  3. Stuff the eggplants with the filling and nestle them in a baking dish with a splash of water.
  4. Bake until meltingly soft, about 25 minutes.
  5. Serve warm or at room temperature.
