- 250 g Chicken breast
- 65 g Farro
- 110 g Chickpeas
- ½ Lemon
- 1 tbsp Extra-virgin olive oil
- 100 g Cherry tomatoes (optional)
- 40 g Arugula (optional)
- ½ tsp Dried oregano (optional)
- 10 g Parsley (optional)
Method
- Simmer the farro in plenty of salted water until the grains are tender but still pop against the tooth, about 28 minutes, then drain it and leave it in the colander to steam dry.
- While the farro cooks, open the chicken breast out flat so it cooks at one thickness, and rub it with the oregano and a pinch of salt.
- Halve the tomatoes, drain and rinse the chickpeas, and chop the parsley. Whisk the olive oil into the lemon juice with a little salt until it thickens.
- Get a ridged pan hot and dry, and cook the flattened breast six minutes on the first side and four on the second, until it is marked dark and springs back under a finger.
- Rest the chicken five minutes on the board, then tear it along the grain into thick strips rather than slicing it — torn edges hold the dressing.
- Turn the warm farro through the dressing with the chickpeas and tomatoes and let it stand a minute — the grain takes up far more lemon warm than it will once cold.
- Fold the rocket through at the last moment, pile the torn chicken on top with any juices from the board, and scatter the parsley over.
