  • 250 g Chicken breast
  • 75 g Freekeh
  • 100 g Chickpeas
  • 2 tsp Extra-virgin olive oil
  • ½ Lemon
  • 40 g Arugula (optional)
  • 80 g Cherry tomatoes (optional)
  • ½ tsp Ground cumin (optional)
  • 10 g Parsley (optional)

Method

  1. Simmer the freekeh in plenty of salted water for twenty-two minutes, until the grains are tender but still chewy, then drain and leave it to steam dry. Its smokiness comes from being roasted green, and it does not need help.
  2. Open the chicken breast out flat and rub it with the cumin and salt.
  3. Drain and rinse the chickpeas, halve the tomatoes, chop the parsley and whisk the olive oil into the lemon juice.
  4. Get a ridged pan hot and dry and cook the flattened breast six minutes on the first side and four on the second, until it carries dark bars and springs back under a finger.
  5. Rest the chicken five minutes, then tear it along the grain into thick strips.
  6. Turn the warm freekeh through the dressing with the chickpeas and tomatoes while the grain still steams.
  7. Fold the rocket through at the last moment, pile the torn chicken over with the board juices and scatter the parsley.
