Chicken, Quinoa and Spinach Salad with Avocado

Ingredients
- 260 g Chicken breast
- 80 g Quinoa
- 60 g Spinach
- 50 g Avocado
- 2 tsp Extra-virgin olive oil
- ½ Lemon
- 100 g Cherry tomatoes (optional)
- ½ tsp Dried oregano (optional)
Method
- Rinse the quinoa until the water runs clear, then simmer it in twice its volume of salted water for fifteen minutes, until the grains uncurl and the pan goes dry.
- Open the chicken breast out flat and rub it with the oregano and salt. Halve the tomatoes.
- Get a ridged pan hot with the olive oil and cook the breast six minutes on the first side and four on the second, until it carries dark bars and springs back. Move it to a board.
- Throw the tomatoes into the hot pan for two minutes until their skins split, then kill the heat and stir the spinach through until it collapses.
- Fork the warm quinoa through the pan with the tomatoes, spinach and lemon juice while the grain still steams.
- Tear the rested chicken along the grain, lay it over the quinoa with the board juices, and slice the avocado alongside at the last moment.
