- 250 g Shrimp
- 80 g Brown rice
- 1 Whole wheat tortillas
- 80 g Spinach
- 1 tbsp Olive oil
- 1 tsp Cumin seeds
- ½ tsp Ground turmeric
- 12 g Ginger
- ½ Lemon
- ¼ tsp Salt
- 1 Green chili (optional)
- 10 g Cilantro (optional)
Method
- Wash the brown rice through two changes of water, then set it under a lid in twice its volume on the lowest flame — one minute to reach a simmer and twenty-eight for the grains to split at the tip.
- With the rice going, toss the prawns with the turmeric, the grated ginger and the salt and leave them in the bowl to take the colour.
- Cut the green chilli into rings and wash the spinach, shaking it dry so it does not flood the pan.
- Heat the olive oil and let the cumin seeds crackle for a few seconds before adding the chilli, then the prawns in one layer for a minute a side. Slide them out to the edge of the pan, drop the spinach into the middle to collapse, and squeeze the lemon over the whole pan off the heat.
- Fork the hot rice into the pan and turn it through the prawns and spinach over a low flame until every grain has picked up the yellow oil.
- Somewhere in the prawns' few minutes, soften the wholewheat tortilla on a second dry pan, ninety seconds a side, until it folds without cracking down the middle.
- Shower the coriander over the pan, then lay the whole lot down the tortilla in one band and roll it tight.
- Halve the roll and serve it warm, cut ends towards you.
