Ingredients

  • 110 g Brown rice
  • 250 g Chicken breast
  • 1 tsp Ground cumin
  • 1 tsp Ground coriander
  • 1 tbsp Olive oil
  • 120 g Tomato (optional)
  • 60 g Carrot (optional)
  • 15 g Almonds (optional)
  • ½ tsp Ground cinnamon (optional)
  • 10 g Parsley (optional)
  • ½ Lemon (optional)

Method

  1. Cut the chicken into large chunks and toss them with the cumin, coriander, cinnamon and salt. Grate the tomato and cut the carrot into small dice. Chop the parsley.
  2. Heat the olive oil in a heavy pot over medium-high and brown the spiced chicken on all sides for 6 minutes. Lift it out and set it aside.
  3. Add the carrot and grated tomato to the same pot and cook 4 minutes, scraping up everything the chicken left stuck to the base.
  4. Stir in the rinsed brown rice and twice its volume of water, bring to a simmer, then return the chicken to sit on top. Cover and cook undisturbed for 30 minutes, until the rice is tender and the liquid gone.
  5. While the rice absorbs: toast the almonds in a dry pan for 3 minutes until they colour and smell nutty, then tip them straight out of the pan so they stop cooking.
  6. Take the pot off the heat and let it stand, still covered, for 5 minutes so the grains firm up before they are disturbed.
  7. Fork the rice up around the chicken, turn it out onto a plate and scatter over the toasted almonds and parsley with a squeeze of lemon.
