Konjac Noodles with Squid, Fennel and Chilli
Squid seared for barely a minute over sweet cooked fennel, folded through konjac noodles with lemon and parsley.

Ingredients
- 200 g Konjac noodles (shirataki)
- 200 g Squid
- 100 g Fennel bulb
- 1 Chili
- ½ Lemon
- 1 tsp Garlic-infused olive oil
- 8 g Parsley (optional)
Method
- Score the squid bodies in a diamond across the inside face and cut them into wide bands — scored this way they curl as they hit the heat instead of buckling. Slice the fennel thinly, ring the chilli and chop the parsley.
- Cook the fennel in the garlic-infused oil over a medium flame for seven minutes, until it goes translucent and loses its raw aniseed edge.
- Raise the heat, push the fennel aside and lay the squid into the bare pan with the chilli. Ninety seconds, no more — squid is tender for a minute and then tough for twenty.
- In a second bare pan, drain and rinse the konjac noodles then dry-fry them four minutes until they squeak and the pan goes dry.
- Off the heat, fold the noodles into the pan with the lemon juice and parsley, turning once so the squid does not keep cooking.
